不同产地甜橙果皮提取物抗氧化活性成分及能力研究

摘要:
以8种不同产地甜橙皮为研究对象,比较其抗氧化活性成分及抗氧化能力.研究结果表明,麻阳冰糖橙皮中多酚、黄酮、单宁和VC含量最高,其含量分别为7.60 mg GAE/g·样品干重、4.57 mg RE/g·样品干重、17.90 mg TAE/g· 样品干重、17.86 mg/g· 样品干重.同时,麻阳冰糖橙皮也展现了最高的铁离子还原能力[(81.50±0.93)μmol TE/g·样品干重]、很高的DPPH·清除能力[(15.77±0.64)μmol TE/g· 样品干重]和ABTS·清除能力[(77.70±0.75)μmol TE/g· 样品干重].Spearman相关分析表明,这4类成分含量与抗氧化活性具有显著相关性.高效液相色谱鉴定甜橙皮中的5种主要黄酮类化合物为橙皮苷、柚皮苷、橙皮素、川陈皮素和桔红素,其中以橙皮苷含量最高[(2.63±0.21)~(4.65±0.33)mg/g·样品干重].主成分分析和层次聚类分析将8种甜橙分为三类,第Ⅰ类:永兴冰糖橙、洪江冰糖橙、麻阳冰糖橙和浏阳脐橙;第Ⅱ类:石门冰糖橙和石门脐橙;第Ⅲ类:麻阳脐橙和邵阳脐橙.尤其以第Ⅰ类的多酚、黄酮、单宁和VC含量高,铁离子还原能力和ABTS·清除能力较强.甜橙皮中抗氧化活性物质的含量及其抗氧化活性可以作为区分不同产地甜橙的重要指标.

Reactive oxygen species-induced vessel endothelium injury is crucial in cardiovascular diseases progression. Rice-derived bran bioactive peptides (RBAP) might exert antioxidant effect through unknown mechanisms. Herein, we validated the antioxidant effect and mechanism of RBAP on H2O2-induced oxidative injury in human umbilical vein endothelial cells (HUVECs). Here, HUVECs were treated with RBAP under H2O2 stimulation; the effects of RBAP on HUVECs oxidative injury were evaluated. H2O2 injury-induced cell morphology changes were ameliorated by RBAP. The effect of H2O2- on HUVEC apoptosis (percentage of apoptotic cell: 38.00 ± 2.00 in H2O2 group vs 21.07 ± 2.06 in RBAP + H2O2 group, P = 0.0013 compared to H2O2 group), the protein levels of cleaved caspase-3 (relative protein expression: 2.90 ± 0.10 in H2O2 group vs 1.82 ± 0.09 in RBAP + H2O2 group, P < 0.0001 compared to H2O2 group) and p-p65 (relative protein expression: 1.86 ± 0.09 in H2O2 group vs 1.35 ± 0.08 in RBAP + H2O2 group, P < 0.0001 compared to H2O2 group) could be attenuated by RBAP. RBAP exerts its protective function through binding with Toll-like receptor 4 (TLR4). Taken together, RBAP protects HUVECs against H2O2-induced oxidant injury, which provided the theoretical basis for the molecular mechanism of rice deep processing and exploitation of functional peptides. © 2017 American Chemical Society.

<jats:sec><jats:label /><jats:p>This work is focused on evaluating the structure (granular morphology, crystalline structure, molecular order structure), and properties (resistant starch content, swelling power, amylose leaching) of resistant starch (RS) prepared from corn starch by an autoclaving and autoclaving‐microwave method. The results indicated that compared with native starch, all of the RS granules became loose, bigger, and rough fragmented, and displayed a B + V crystalline structure. Meanwhile, the relative crystallinity, helix content, molecular orders for RS samples decrease. The RSs displayed mainly RS3 and RS5 types, with enhanced thermal stability. Compared to autoclaving method, the autoclaving‐microwave treatment significantly increases the RS content from 30.15% to 40.70%, since microwave could promote the formation of the double helix in RS. In particular, the RS prepared by autoclaving‐microwave (HRS‐CM) exhibits the highest degree of crystallinity, ordered structure, and degree of double helical structure as confirmed by XRD, FT‐Raman, and <jats:sup>13</jats:sup>C NMR.</jats:p></jats:sec>

Apricot kernels were roasted at various temperatures (120–180 °C) for 10 min and changes in the fatty-acid profiles, oxidative stability, and antioxidant activity, as well as the total phenolic contents (TPC) of the oils and skin (seed coat), were monitored. Roasting has no obvious influence on profiles and contents of fatty acid, induction period (IP), browning index, TPC, and antioxidant activity (2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2-azinobis(3-ethylbenzothiazoline-6-sulfonic acid), (ABTS) and Oxygen Radical Absorbance Capacity (ORAC) of oils obtained from apricot naked-kernel, but increases IP, TPC, and oxidative stability in oils obtained from apricot kernel with skin. All results in the present work demonstrated that thermal treatment accelerated the production and transference of alcohol-soluble phenolics into the oil, and improved the oil oxidative stability. It is not Maillard reaction products but alcohol-soluble phenolic compounds in skins that play a role in improving the oxidative stability and antioxidant activity of oils, and inhibition for primary peroxide production was more effective than secondary peroxide production at a low roasting temperature and a short roasting time. The present findings can advance knowledge on the conditions used for utilization of coproducts (skin) of apricot kernel and facilitate large-scale production of stable oil against oxidation. © 2018 AOCS

Studying the mechanisms of oxidative stress in endothelial cells is vital to the discovery of novel drugs for the treatment of cardiovascular disease. This article reviews the progress within the field of the role of oxidative responses in the physiology and growth of endothelial cells and emphasizes the effects of several main signal pathways involved in the oxidative stress of endothelial cells. Herein, we aim to provide scientific direction that can serve as a basis for researchers specializing in the signaling pathway of oxidative stress. © 2017 Ying Liang et al.

Abstract: In this study, rice bran polysaccharides (RBP) were extracted using the hydrothermal method (RBP-H), microwave-assisted extraction (RBP-M) and enzyme-assisted extraction (RBP-E). The prepared RBP samples exhibited the typical spectral patterns of polysaccharides, but differed in chemical composition, molecular features, antitumor and antioxidant activities. The molecular weights (Mw) of RBP-H, RBP-M, and RBP-E were 1.03 × 105, 2.62 × 105, and 0.46 × 105 g/mol, respectively. In vitro, all RBP samples significantly inhibited mouse sarcoma S180 cells viability in a dose-dependent manner. In vivo, RBP-M or RBP-E could not only inhibit the growth of the tumor, but also enhance the spleen index. In addition, RBP-E could induce an enhancement of superoxide dismutase (SOD) and glutathione peroxidase activities and a scavenging effect on malondialdehyde. This study demonstrated that the effective antitumor activity of RBP may be owed to its enhancement of antioxidant activity function. The present work suggested that RBP, especially RBP-E could be a safe and effective antitumor, bioactive agent or functional food. Practical Application: Polysaccharides is extracted from rice bran (RBP) using hydrothermal, microwave-assisted and enzyme-assisted extraction methods. The results suggested that the antitumor activity of RBP was associated with enhancement of immunization and antioxidant. RBP could be explored as a natural antitumor and antioxidant agent applied in medicines and functional foods. © 2017 Institute of Food Technologists®

杂优水稻对土壤中铅和镉的吸收与分配

研究在长沙市金星村采集的普通红壤、加石灰红壤,以及于两种土壤生长的杂优水稻,检测土壤、根、茎叶、壳及糙米中Pb和Cd的含量,分析水稻出穗前,向土壤中加入石灰对Pb和Cd在水稻各部位分配的影响。结果表明:在普通红壤中,Pb有94.20%在根中分配,Cd只有54.00%在根中分配;在加石灰红壤中,Pb和Cd在根及茎叶中总的分配分别增加2.20%,17.20%,在糙米中的分配分别降低0.78%,11.30%;加石灰红壤中糙米Pb和Cd的富集系数分别降低0.02%,2.60%。因此在水稻出穗前向土壤中加入石灰能有效降低Pb和Cd在糙米中的富集。

摘要:
利用近红外技术结合化学计量学的方法建立了稻谷新陈度近红外光谱定量模型。对90个稻谷样本,通过近红外光谱仪扫描获得了从950~1 650nm的光谱信息。运用UNSCRAMBLER9.7软件进行计算,选择全谱区,结合偏最小二乘法(PLS)算法,得到光谱最佳预处理方法为一阶导加Savizky-Golay平滑,最佳主成分数为7。进行内部交叉验证,决定系数r2为0.967 9,预测误差为54.51,且预测结果与真实值通过t检验,说明模型是可行的。为稻谷新陈度的快速无损检测提供了一种新的方法。

摘要:
通过研究1年储藏期内稻谷脂肪酸值、直链淀粉含量、粗蛋白含量的变化,探索储藏时间对7种稻谷品质的影响。结果表明:稻谷脂肪酸值在储藏期间逐渐升高,直链淀粉含量变化较小,而蛋白质含量呈现缓慢下降趋势。但不同品种在储存过程中的变化规律差异明显,仅以脂肪酸值作为稻谷新陈度的评价标准不合适。在所研究的稻谷中,中优208的品质最稳定属耐储藏品种。

采用紫外线照射控制发芽糙米细菌总数研究

摘要:
发芽糙米在发芽过程中微生物大量生长,存在安全隐患;本研究采用紫外线照射方法以控制发芽糙米细菌数量.结果表明,紫外光可有效减少发芽糙米中微生物数量,糙米在发芽24 h后,每隔6 h采用距紫外灯(30 W)光源25 cm距离照射3 min处理,发芽糙米细菌总数保持105 cfu/g以下,发芽率没大幅下降,芽长增加,γ–氨基丁酸含量增加,且发芽糙米感官质量有明显提高.

摘要:
为了确定机压丢糟包包曲适宜的小麦粉碎度,在其它条件相同的情况下,采用单因素实验设计方法,研究小麦粉碎度分别为48%、51%、54%、57%和60%对偏高温大曲培养过程中品质的影响.实验结果表明:1)小麦粉碎度影响机压丢糟包包曲的感观品质、糖化力、发酵力,也影响霉菌数、酵母数、芽孢杆菌数;2)最适小麦粉碎度为57%.研究结果为进一步优化其它工艺条件和指导生产提供了理论依据.

为优化机压包包曲中丢糟适宜的添加量,在其他条件不变的情况下,采用含丢糟质量分数0、5%、7%、9%、11%机压包包曲与纯小麦机压包包曲进行制曲对比实验。结果表明:丢糟添加量对机压包包曲培养过程中水分、酸度、糖化力、发酵力和主要微生物类群均有不同程度的影响,对新曲的感官品质也有一定的影响;适宜的丢糟添加量有利于改善大曲品质,其中含丢糟质量分数9%的机压包包曲品质最优。因此,在机压包包曲中添加丢糟是可行的。

摘要:
探讨机压丢糟包包曲的酿酒效果,采用含丢糟质量分数5%、7%、9%和11%的机压包包曲与纯小麦机压包包曲进行酿酒对比实验。结果表明:1)机压丢糟包包曲有利于提高糖化、发酵的程度,能提高浓香型大曲酒的出酒率;2)含丢糟质量分数9%的机压包包曲酿酒效果最优,不仅能显著提高产酒量,而且能在一定程度上提高酒品质。因此,机压丢糟包包曲用于酿酒生产是可行的。

金橘果渣膳食纤维制备工艺研究

摘要:
为了进一步深度开发和综合利用我国柑橘类水果资源,采用酸碱洗涤剂法制备金橘果渣膳食纤维.通过正交试验确定了金橘果渣水溶性膳食纤维的提取工艺,结果表明:提取水溶性膳食纤维的最佳工艺为:pH值1.0、提取温度85C、提取时间80min、加水量25mL/g,水溶性膳食纤维的提取率为20.76%;将该工艺剩余的残渣提取水不溶性膳食纤维,其提取率为15.42%.合并及脱色后的总膳食纤维产品中总膳食纤维含量为82.42%,水溶性膳食纤维含量为30.26%,其SDF/IDF质量比为0.59,而金橘果渣原料中其比值仪为0.18.金橘果渣膳食纤维具有广阔的市场应用前景.

近年来,伴随着高等教育向大众化发展,高校扩招出现了一系列问题,考试场地设施不够、学生数量增加、学生素质良莠不齐,为考试管理带来了诸多困难,助长了部分学生投机取巧的心理。据调查,历年来大学生考试违纪现象呈上升趋势,它不仅败坏了学风、考风,而且对学生思想品德有极大的腐蚀作用,妨碍他们的健康成长,本文通过对考试作弊原因的调查探讨,对学生的心理进行分析,为高校考试提供一些可行的建议与方法。

摘要:
报道了应用于医疗器械的InP基1730nm波段半导体激光器.外延片采用低压金属有机物化学气相沉积法(MOCVD)生长,有源区为5个周期的InGaAs量子阱层和InGaAsP垒层.器件采用pnpn结限制掩埋结构,有源区脊宽2μm、腔长300μm.室温下腔面镀膜后激光器管芯的阈值电流为18±5mA,8mW输出功率时的工作电流为60±5mA.采用TO封装后,100mA工作电流下激光器的输出功率大于5mW,输出波长为1732±10nm,高温恒流加速老化筛选实验表明,器件具有长期工作的可靠性,满足实用化要求。
