During storage, transportation and processing of raw materials and products of grain and oil, the lipids were hydrolyzed and oxidized by endogenous lipase and lipoxygenase. The lipid peroxidation products could induce protein oxidation. Protein oxidation leads to cross-link of protein structure, which decreases protein digestion extent by the body and affects composition of intestinal microbiota and intestinal barrier function.
