Lactic acid bacteria are recognized as food safety microorganisms, extracellular polysaccharide is a kind of carbohydrate produced and secreted by Lactobacillus during its growth and metabolism. There are many probiotic functions, such as immune regulation, anti-cancer, anti-oxidation, regulation of intestinal microecological balance and so on.
