The protective and controlled release effect of Fmoc-FF(Phe) polypeptide/carrageenan hydrogel on lactase in simulated gastric juice were exploved. The results showed when the mass ratio of Fmoc-FF to carrageenan was 1 ∶ 15, the mass concentration of carrageenan was 48 %, the activity of lactase embedded in the hybrid hydrogel could reach 67.63 % of the enzyme which was not treated by gastrointestinal tract, which was much higher than that of the unencapsulated lactase(0 %) under the same experimental conditions.
