To explore the changes of lipid during storage of highland barley, with highland barley in Tibet as material, the effect of various temperatures ( 0,25,37 ~C ), conventional, and CO2 controlled atmosphere storage on the fatty acid value, peroxide value and lipase activity of barley was studied. The result indicated that the changes of the three indicators firstly increased and then decreased during the storage.
