谷维素是米糠、米糠油、大米胚芽等主要营养活性因子,系为环术菠萝醇同系物阿魏酸酯混合物:其中,以环木菠萝烯醇和24–亚甲基环木菠萝烯醇的阿魏酸酯为主。近年研究表明:谷维素具有抗氧化、清除自由基、降低血脂与胆固醇等生理功能,可预防心血管疾病和癌症发生及发展;谷维素在医学上主要是一种植物神经调节剂,对治疗神经失调具有显著疗效。该文综述国内外有关米糠γ–谷维素生理功能研究进展,并对今后研究方向进行展望。

γ-oryzanol is mainly nutritional activity factors in rice bran, rice bran oil and rice germ, which is a mixture of ring of pineapple alcohol homologues ferulic acid esters, and among of them ferulic acid ester cycloartenol and 24-methylene cycloartenol are mainly components.
