功能食品已成为当今国内外食品科学与工程领域研究的热点.昆虫生物量大,资源丰富,富含许多功能因子,如昆虫特殊蛋白,多不饱和脂肪酸,昆虫甲壳素(壳多糖),微量活性元素硒、锌、铁、锰、铜,以及VA、VC、VE等.因而,开发昆虫功能食品具有广阔的前景.

Functional Food has been a key study f ocus of food science and engineering in the world.Insects is a enormous biologic resource,in which there are ample kinds of functional factors,such as special protein,PUFA(Polyunsaturated fatty acids),Chitin,Se,Zn,Fe,Mn,Cu,Vitamin A,Vitamin C and Vitamin E,etc.So the e xploitation of Functional Foo...
