为深入研究石栎属植物淀粉的理化特性,有效地开发野生石栎属淀粉资源,采用显微观察、X-射线衍射和碘电位滴定等方法,对石栎属植物淀粉粒特性进行了观察研究.结果表明,石栎属植物淀粉粒较小,形状较为规则,具有明显的偏光黑十字,淀粉粒的结晶结构都属于C型.石栎属植物淀粉的糊化温度较高,直链淀粉含量较低而支链化程度较高.淀粉粒的溶解度和膨胀度较小.

In order to lucubrate physicochemical characteristics of Lithocarpus starch and effectively utilize the abundant resources, the granular properties of Lithocarpus starch have been investigated experimentally by applying modern analytical techniques such as electron scan, Xray diffraction, polarizing microscopy and Iodine voltage analyzer etc. The results show that the granules of Lithocarpus starch have comparatively regular figures and smaller sizes.
