The anti-oxidation of Gallic acid, quercetin, catechin of dif- ferent states and bio-phenol extracted from leaves, seeds, oil in camellia was studied by Rancimat method. With adding different con- centrations of single antioxidant and different rations of antioxidant combination into camellia oil, the antioxidant effect was determined by using induction time.
