Antifreeze proteins (AFPs) are a family of proteins capable of controlling the growth of ice and inhibiting the recrystallization between ice granules and possess two distinct antifreeze activities which are termed thermal hysteresis (TH) activity and recrystallization inhibition (RI) activity respectively.
